I use minced claims in a clam dip (cream cheese base) for eating with potato chips. I am very particular. Many minced clams have heavy preservatives such as Snows or Geisha and the natural taste of the juice is diminished because of it. In all my discriminating taste-testing, I prefer Cento above all others. I have tried the two afore-mentioned, Reese, Underwood, Doxsee, Crown Prince, and at least three others that I forget the name. Cento meat is pinkish and appears to be handled more carefully in the cleaning/packing process.
