Pasta Dough

  • 2 cups semolina flour
  • 1 teaspoon olive oil
  • 2 eggs slightly beaten
  • 2-4 tablespoons warm water

Mound the flour in a large bowl or on board. Create a hole in the center of the flour and add eggs, oil and 2 tablespoons of warm water.

Using fingers or fork, form dough into ball; if the mixture is dry, add remaining water. Lightly flour cutting board or follow your pasta machine directions.

Knead dough until smooth and elastic. Cover dough with cloth and let rest 30 minutes.
